A Gaggle of Green Beans
Instructions:
- 1 lb. fresh green beans
- 2 tbsp. olive oil
- 1 large onion, chopped coarsely
- 5 cloves garlic, chopped
- 4 large tomatoes, peeled, seeded and chopped
- 1/2 cup dry white wine
- 1/2 cup pitted olives
- 1 tbsp. lemon juice
- 1/2 tbsp. fresh ground pepper
- Steam green beans until crisp tender (about 5 minutes).
- Heat oil in large skillet over medium heat.
- Add onion and garlic.
- Saute for 5 minutes.
- Add tomatoes and wine.
- Cook for 20 minutes.
- Add olives and beans and heat through.
- Sprinkle with lemon juice and pepper.
