Aioli Dip
Instructions:
- 1 small gold-fl esh potato
- 2 egg yolks, beaten
- 3 cloves garlic, minced
- 2 tbsp. lemon juice, or the juice from 1 lemon
- salt and pepper to taste
- 2 cups olive oil
- Cook the potato in salted water until tender. Peel and grate.
- In a medium bowl, combine grated potato, egg yolks, garlic, lemon juice, salt, and pepper.
- Quickly whisk in the olive oil and mix until blended.
