Anything-Scented Peas
Instructions:
Peas have a delicate flavor that can be enhanced a variety
of ways with just a touch of another ingredient, though
subtlety is the key. A pinch of sugar makes the flavor even
more intense.
Other vegetables you can use: about 11/2 pounds of
snow or sugar snap peas.
2 tablespoons butter or extra virgin olive oil
1 tablespoon of any seasoning from the list that
follows
2 cups peas (frozen are fine; thaw first and
drain well)
Salt to taste
Pinch sugar (optional)
MAKES: 4 servings
TIME: 20 minutes
- Put the butter or oil in a large skillet over medium heat. When the butter is melted or the oil is hot, add the seasoning and cook, stirring constantly, until fragrant, just a minute or so.
- Add the peas and cook for a couple minutes more, swirling the pan a bit to coat them in the pan juices and soften them a bit. Taste, sprinkle with salt and a bit of sugar if you like, and serve hot or at room temperature.
- Peas with Bacon, Lettuce, and Mint.
- Substitute 4 ounces chopped bacon for the butter or oil and add 1 small finely chopped onion, 2 cups chopped hearts of romaine lettuce, and 1/2 cup chopped fresh mint leaves.
- Render the fat from the bacon and remove it from the pan with a slotted spoon (reserve the bacon). Cook the onion in the pan until soft and translucent. Add the peas and lettuce and proceed with the recipe, sprinkling the reserved bacon and mint on before serving.
