Apple and Rhubarb crumble

- 500 g rhubarb
- 500 g cooking apples, Granny smith or Golden Delicious
- 180 g caster sugar
- 40 g unsalted butter
- 1 cinnamon stick
- juice of ½ lemon
- Crumble
- 125 g unsalted butter
- 125 g caster sugar
- 250 g plain flour
Instructions:
- Preheat the oven to 180°c.
-  Trim the rhubarb and cut into 2-cm pieces. Peel the apples, remove the core and dice to roughly the same size as the rhubarb.
- Place the sugar, butter, cinnamon and lemon juice in a stainless steel pan and cook over medium heat until lightly caramelised. add the rhubarb and cook for 5 minutes, then add the apple and cook for another 5 minutes. remove from the heat and allow to cool.
-  For the crumble—place all of the ingredients in a bowl and mix well using your hands. keep mixing and rubbing to form coarse crumbs.
-  To assemble—place the apple and rhubarb mixture in a baking dish or individual ramekins filling to threequarters full. Top with the crumble mixture and then bake in the oven until the crumble is crisp and pale brown, about 30 minutes. serve immediately with cream, yoghurt or ice-cream.
