Apple orchard snack cake
Instructions:
A classic snack cake that is not too sweet, the simple ingredients make
it a breeze to throw together. Add in the full flavor of locally grown
apples (preferably from a family orchard trip!) and you can’t go wrong.
It is perfect for breakfast, with a cup of coffee while visiting friends, or
any other time of day.
1 cup granulated sugar
½ cup (1 stick) butter or margarine, melted
3 eggs
2 cups graham cracker crumbs 2 to 3 apples, peeled, cored, and
diced
¾ cup chopped walnuts, optional
Confectioners’ sugar for sprinkling

- Preheat the oven to 350 F and grease an 8 x 8-inch pan. Blend the granulated sugar, margarine, and eggs in a large bowl with a spoon.
- Stir in the graham cracker crumbs, apples, and walnuts until blended.
- Spread the batter in the pan and bake for 40 to 45 minutes, until firm to the touch. Sprinkle liberally with confectioners’ sugar. Cool and then cut into squares.
