Apple-Sesame Kanten

- 6 cups apple juice
- 2 sticks agar
- 1/2 cup tahini
- fresh fruit for garnish
Instructions:
Kanten is a traditional Asian fruit dessert. You can vary the juice used, making many different flavors.
- Pour apple juice into a saucepan. Break agar sticks into pieces, and soften pieces in juice. When agar is soft, put saucepan over medium-high heat. Bring to a boil, then simmer for 15 minutes, stirring frequently, until agar dissolves.
- Pour juice mixture into a bowl, and refrigerate until kanten sets, approximately 1 1/2 to 2Â hours.
- Using a blender, blend kanten with tahini until smooth and creamy. If necessary, blend in batches, and then pour into individual serving dishes.
- Serve cold, and garnish with fresh fruit: berries, grapes, kiwi, or citrus. It's pretty served in stemmed glasses.
