Applesauce Loaf
Instructions:
If you’ve never tried this, you’re in for a special holiday treat.
1 cup granulated sugar
½ cup butter, softened
1 large egg, room temperature
1½ cups all-purpose flour
1½ teaspoons baking soda
1 teaspoon ground cinnamon
¾ teaspoon nutmeg
½ teaspoon salt
½ teaspoon ground cloves
1½ cups unsweetened applesauce
½ cup dark raisins
½ cup coarsely chopped walnuts (optional)
Confectioners’ sugar (for dusting)
- Preheat oven to 350 F. Grease and flour a 9 × 5 inch loaf pan.
- In a medium bowl, cream butter and sugar together until light and fluffy.
- Beat in eggs.
- In another bowl, mix together flour, baking soda, cinnamon, nutmeg, salt, and cloves. Gradually beat flour mixture into butter mixture.
- Beat in applesauce.
- Stir in raisins and nuts.
- Pour batter into prepared pan.
- Bake loaf for 1 hour, or until a toothpick inserted into the center comes out clean. Transfer pan to wire rack. Cool for 10 minutes. Remove loaf from pan and cool completely.
- Dust with confectioners’ sugar.
