Applesauce Spice Cake
Instructions:
For a quick snack, make this easy cake. You may already have all of the ingredients on hand. 2 cups all-purpose flour 11â„2 teaspoons ground cinnamon 1 teaspoon baking powder 1â„2 teaspoon baking soda 1â„2 teaspoon ground ginger 1â„4 teaspoon ground nutmeg 1â„2 teaspoon salt 1â„2 cup butter or margarine (1 stick), softened 1â„4 cup granulated sugar 1 cup packed dark brown sugar 2 large eggs 11â„4 cups unsweetened applesauce 1â„2 cup dark seedless raisins confectioners’ sugar
Makes 9 servings. Prep: 20 minutes Bake: 40 minutes
- Preheat oven to 350°F. Grease and flour 9-inch square baking pan.
- In medium bowl, with wire whisk, stir flour, cinnamon, baking powder, baking soda, ginger, nutmeg, and salt.
- In large bowl, with mixer at low speed, beat butter and granulated and brown sugars until blended. Increase speed to medium-high; beat until light and fluffy, about 3 minutes. Add eggs, one at a time, beating well after each addition. Reduce speed to low; beat in applesauce. Mixture may appear curdled. Beat in flour mixture until smooth, occasionally scraping bowl with rubber spatula. Stir in raisins.
- Scrape batter into prepared pan; spread evenly. Bake cake until toothpick inserted in center comes out clean, about 40 minutes. Cool completely in pan on wire rack. To serve, dust with confectioners’ sugar.
