Arroz Entomatado
Instructions:
- 2 cups Brown rice, uncooked
- 4 1/2 cups Tomato juice
- 1 medium Onion
- 1/2 each of Red, yelow, and Greeen peppers
- 2 cloves Garlic
- 1/2 cup Fresh cilantro, chopped
- 3 Tbs. Oil
- 1 tsp. Chili powder
- 1 tsp. Salt
- Saute all fresh ingredients in oil.
- Add all remaining ingredients in with sauteed vegetables and mix together.
- Place in covered baking dish and bake at 350 F for 1 hour, or until rice is completely cooked.
