Aunt Abby Chicken Patties
Instructions:
- 6 cups of chopped, cooked chicken
- 1/4 tablespoon of butter
- 1 tablespoon of chop ped onion
- 1/3 cup of flour
- 2 cups of milk
- 2 teaspoons of salt
- 1/4 teaspoon of black pepper
- Brown the onion in butter and stir in the flour, salt, and pepper.
- Pour in the milk and cook until kind of bubbly.
- Remove from heat and mix with the chopped chick en in a shallow bowl.
- Cover and put in refrigerator over night.
- Remove from the refrigerator and shape into patties.
- Beat 3 eggs and dip patties in the eggs.
- Chill for 15 minutes and fry in hot oil until golden brown.
