Avocado and Mozzarella Salad
Instructions:
- 2 large beef tomatoes, each sliced into
- 6 thin slices
- 2 ripe avocados, peeled and cut into thin slices
- 150g mozzarella cheese, cut into 12 slices
- 2 spring onions, chopped very finely
- For the dressing
- 3 tablespoons white-wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon runny honey
- 1 tablespoon chopped chives
- Salt and pepper to taste
- Mix all the ingredients for the dressing together and whisk to combine.
- Arrange the tomatoes, avocado and mozzarella alternately on small plates.
- Sprinkle the spring onions over the salad and pour the dressing over it.
