Bacon Wrapped Marinated Pork Loin
Instructions:
- 1/4 cup soy sauce
- 1/4 cup packed light brown sugar
- 2 tablespoons dry sherry
- 11/2 teaspoons dried minced onions
- 1 teaspoon ground cinnamon
- 2 tablespoons olive oil
- 1 pinch garlic powder
- 11/2 pounds Farmland Boneless Pork Loin
- 8-10 slices Farmland* Hickory Smoked Bacon
- Wooden skewers or toothpicks
- Combine soy sauce, brown sugar, sherry, dried onions, cinnamon, olive oil and garlic powder in a large resealable plastic bag. Seal and mix together. Add pork, seal and marinate in the refrigerator for 6-12 hours.
- Partially cook bacon, rendering some of the fat, and drain. Wrap bacon around pork and pin with water-soaked skewers or toothpicks to hold bacon in place.
- Preheat grill to medium-high to high heat.
- Grill meat over hot coals until well done, approximately 15-25 minutes. Cut into medallions and serve. Makes 4-6 servings.
