Baked Bananas
Instructions:
Bananas, being one of Antigua’s main fruit crops, feature in many dishes. They
are used when unripe (green) as a vegetable, or when ripe, as dessert. Baked bananas is a popular dessert throughout the Caribbean, and is often served alight
with local rum.
4 bananas, sliced lengthwise
1⁄2 cup brown sugar
1⁄4 cup butter
1⁄4 cup milk
1⁄2 tsp cinnamon
- Lay banana slices in a casserole dish.
- Melt sugar in butter and milk in a pan over medium heat.
- Pour over bananas. Sprinkle with cinnamon.
- Bake at 3508F for 15–20 minutes. Serve at once.
