Baked coconut custard
Instructions:
- This is a wonderful simple custard and reXects the 1930s fascination with coconut as an ingredient in cooking.
- 4 cups milk
- 6 egg yolks, beaten
- 6 egg whites, beaten
- 1 cup sugar
- 1/4 teaspoon salt
- 2 cups grated coconut (fresh or dried)
- Beat egg yolks and whites separately; add to milk.
- Add sugar, salt, and coconut.
- Pour into buttered custard cups.
- Bake in pan of hot water till set in a 325-degree oven for 20 to 25 minutes.
