Baked peaches flambe
Instructions:
- This is great with fresh peaches when in season, but out of season, use your own home-canned peaches. Or, if necessary, use commercially canned peaches.
- 8 peach halves, peeled;
- 1 tablespoon fresh lemon juice;
- 1⁄2 cup tightly packed brown sugar;
- 1⁄4 teaspoon nutmeg;
- 1⁄4 cup brandy, rum, or kirsch;
- Whipped cream or heavy cream.
- Preheat oven to 350 F.
- Arrange the peach halves in a shallow baking dish with the cut side up. Brush with the lemon juice and sprinkle with brown sugar and nutmeg. Bake for 30 minutes. Just before serving, heat the brandy, rum, or kirsch in a metal ladle or small pan, until barely warm. Ignite and pour over the peaches. Transfer peaches to serving dishes, spoon the pan juices over them, and top with whipped cream or heavy cream.
