Baked Pineapple and Sweet Potato
Instructions:
- 2 medium sweet potatoes, cooked and thickly sliced
- 1 fresh pineapple, peeled, cored and sliced thin
- 4 TBS freshly grated coconut
- 4 TBS green onions, chopped
- grated cheese or a commercial cheese sauce (optional)
- salt and pepper to taste
- Preheat oven to 3508F and grease an ovenproof casserole.
- Arrange sweet potato, pineapple, coconut, and green onions in layers in the
- dish, seasoning each layer.
- Place a layer of cheese on top, if desired.
- Bake for about 30 minutes.
- Serve hot
