Bananas foster
Instructions:

A classic in the South, "fried or flamed" bananas were first prepared in the cook houses behind plantation homes. They became well known, due to the popularity of New Orleans restaurants that regularly feature this dessert.
- 1⁄2 cup brown sugar;
- 1⁄4 cup butter;
- 4 bananas, peeled, halved crosswise and lengthwise;
- A dash of cinnamon;
- 1⁄4 cup banana liqueur;
- 1⁄3 cup light rum;
- 4 scoops vanilla ice cream.
- In a flat chafing dish or wide skillet, blend the brown sugar and butter; heat until mixture bubbles. Add the bananas and saute until tender. Sprinkle with cinnamon. Combine the banana liqueur and rum. Heat slightly, ignite, and pour over the bananas. Baste with the flaming liquid until the flame burns out. Serve immediately over ice cream.
