Basic Roast Turkey Breast, on the Bone
Instructions:
At 3 to 6 pounds, a turkey breast is a fine choice for a
small party and produces plenty of leftovers for sandwiches.
One 3- to 6-pound turkey breast
About 3 tablespoons extra virgin olive oil or melted
butter for basting
Salt and freshly ground black pepper
MAKES: 6 to 12 servings or more
TIME: About 1 hour
- Heat the oven to 450 F. Put the turkey on a rack in a roasting pan. Brush the turkey with oil, season it with salt and pepper, and put it in the oven.
- Roast for about 45 minutes, basting every 15 minutes or so, then begin checking every few minutes with an instant-read thermometer. The turkey is ready when the thermometer reads 15–165 F. Let the turkey rest for 5 to 10 minutes before carving and serving.
