Basic Tomato Sauce

- 3 tablespoons extra-virgin olive oil
- 1 teaspoon oregano
- 1⁄ 4 teaspoon red pepper flakes
- 1⁄ 2 teaspoon coarse sea salt
- 2 large cloves garlic, minced
- 1 28-ounce can diced tomatoes
- 1⁄ 2 teaspoon balsamic vinegar
Instructions:
You can use this sauce as a topping for my Rosemary-Roasted Tofu Cubes and as a base for pizzas.
- In a medium-size saucepan, combine the olive oil, oregano, red pepper flakes, salt, and garlic. Turn the heat to medium-high and sauté for 1 minute, stirring frequently.
- Stir in the tomatoes, raise the heat, and bring to a boil. After 30 seconds reduce the heat to medium-low and simmer for 15 minutes, stirring every few minutes. Add the balsamic vinegar, cook for an additional minute, and remove from heat. If necessary, add additional salt.
