BBQ Chicken & Potato Bake
Instructions:
- 5 cups frozen Southern-style hash brown potatoes, thawed
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped onion
- 1 Tbs. Butter, melted
- 2 cups (8 oz.) shredded Cheddar cheese, divided
- 4 boneless, skinless chicken breast halves (5 oz. Each)
- 1/2 cup barbecue sauce
- Mix potatoes, peppers, onion, butter and 1 1/2 cups cheese in buttered 13x9 baking pan.
- Coat chicken with barbecue sauce; place on top of potato mixture.
- Bake in preheated 400 F oven 40 minutes or until chicken is cooked through.
- Top with remaining 1/2 cup cheese.
- Continue baking 5 minutes or until cheese is melted.
