Bean and Bacon Soup
Instructions:
- 1/2 pound of navy beans
- 6 slices of bacon
- 1 onion, chopped
- 1/2 cup of chopped celery
- Salt and Black Pepper to taste
- Soak the navy beans in cold water for about 2 hours.
- Drain the beans and wash with cold w ater.
- Place the beans in a pot, cover with water and cook for about 45 minutes to an hour.
- Add the chopped onion, celery, salt, and pepper and cook for about a half an hour or until the beans are tender.
- While the beans are cooking fry the bacon until crisp.
- After the bacon has cooled crumble in the pot of beans and let simmer for a few more minutes.
