Beans with clams
Instructions:
- Pick over the clams, discarding any that are damaged.
- Put the clams in a large bowl and cover with salted water.
- Let soak for 1 hour. This will help the clams to purge themselves of any sand.
- Heat the sofrito in a large pan over medium heat.
- Stir in the beans, followed by the fish stock.
- Simmer the beans for 15 minutes.
- Add the picada
- Lift the clams out of the water, leaving any sand behind in the bowl, and add to the pan.
- Cook for 3 minutes, until the clams open. Discard any clams that stay shut.
- Season to taste with salt and pepper.
- Serve in soup dishes.
