Black Bean Quesadillas

- 1 cup canned black beans, rinsed and drained
- 2 tablespoons sliced green onions
- 2 tablespoons chopped roasted red peppers
- 2 tablespoons chopped red onion
- 1 tablespoon lime juice
- 1 tablespoon chopped fresh cilantro or parsley
- 1 garlic clove, minced
- 4 burrito-size (10-inch) flour tortillas
- 1 cup (4 ounces) grated asadero cheese or shredded Muenster cheese, divided
Instructions:
These satisfying quesadillas take just 15 minutes to make.
- In a small bowl, slightly mash the beans with a fork. Stir in the green onions, peppers, onion, lime juice, cilantro or parsley, and garlic. Set aside.
- Preheat the oven to 200°F.
- In a lightly greased large skillet over medium-high heat, cook the first tortilla for 15 seconds or until softened; turn over. Spread ¼ cup bean mixture over half of the tortilla; top with ¼ cup of the cheese. Fold the tortilla in half over the filling. Cook for 2 minutes on each side or until the cheese melts. Place the cooked quesadilla on a baking sheet, and set the baking sheet in the oven to keep warm as you prepare the remaining quesadillas. Then, beginning with a fresh tortilla, repeat the process, placing each quesadilla in the oven after cooking, until all of the quesadillas have been assembled.
- To serve, cut each quesadilla into four wedges.
