Black Cherry Refresher

- 12 cherries, pitted
- Roughly 2 tablespoons fresh mint leaves, plus more for garnish
- 1 cup gin
- ¼ cup St. Germain Elderflower Liqueur
- 1 cup cherry juice
- Ice
- 1¼ cups sparkling water, or as needed
- 6 lime wedges, for garnish
Instructions:
For those who don’t like the herbal flavor of gin, vodka is a nice alternative.
- In the bottom of a glass pitcher, using a muddler, muddle the cherries and mint together until the mint is crushed and the cherries release some of their juice. Add the gin, elderflower liqueur, and cherry juice and stir to combine.
- To serve, fill 6 highball glasses with ice, divide the cherry mixture evenly among the glasses, and top each with sparkling water (the amount needed will vary depending on the size of your glasses). Garnish each glass with a lime wedge and serve immediately. Or, if you prefer, combine the cherry mixture and sparkling water in a pitcher, put a bowl of lime wedges and an ice bucket alongside, and let your guests serve themselves.
