Blackberry duff
Instructions:
-
This is cooked in the top of a double boiler. When fresh blackberries are not available, use frozen, unsugared berries without thawing them first.
- 2 cups all-purpose flour;
- 2 teaspoons baking powder;
- 1⁄2 teaspoon salt;
- 1 cup milk;
- 2 eggs, beaten;
- 1 cup sugar;
- 2 cups blackberries;
- Eggnog Sauce.
- In a bowl, combine the flour, baking powder, and salt. Mix the milk with the eggs, and combine with the flour mixture. Set aside.
- Sprinkle the sugar over the blackberries and let stand 30 minutes. Stir the berries into the batter. Turn mixture into the top of a 2-quart double boiler, cover, and cook over boiling water for 2 hours. Do not stir. Serve warm with Eggnog Sauce.
