Blackberry flummery

This version of a flummery is a cooked berry mixture, sweetened and slightly thickened, which has whipped cream folded in after it has cooled.
- 4 cups fresh or frozen blackberries;
- 1 cup sugar;
- 1 tablespoon cornstarch;
- 1⁄4 cup water;
- 1 cup heavy cream, whipped.
- In a saucepan, simmer the berries with the sugar for 15 minutes, stirring occasionally.
- Mix the cornstarch with water until dissolved, and stir into the hot berry mixture. Cook until thickened. Cool. Fold in the whipped cream and chill until ready to serve.
