Blueberry Brown Betty
Instructions:
A betty is a fruit dessert that features fruit topped with a crumb
mixture or fruit and a crumb mixture in alternating layers. The actual
origin of the term betty is unknown, but recipes for fruit bettys were
mentioned in print as far back as 1864. Apple brown betty is made
by using apples instead of the blueberries. The very best version is to
bake this with fresh wild blueberries, second choice is with fresh
cultivated blueberries, and the third choice is with frozen berries.
4 cups fresh blueberries, or frozen, unthawed berries
1/2 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 cup butter
MAKES 6 SERVINGS
- Preheat oven to 325 F.
- Place blueberries in a 11/2 -quart baking dish or 6 individual ramekins that can go into the oven.
- Combine sugar, flour, and salt. Cut in the butter, until the mixture resembles coarse crumbs. Sprinkle mixture over the blueberries.
- Bake 35 minutes, or until the top is crisp and golden.
