Blueberry Pecan Cluster Muffins
Instructions:
- 1 cup boiling water
- 2 1/2 teaspoons baking soda
- 3 cups Kirkland Signature/Newman’s Own Wild Blueberry Pecan Cluster Cereal
- 2 cups buttermilk
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 2 1/2 cups flour
- 1/2 teaspoon salt
- Preheat oven to 375 F.
- Mix boiling water and baking soda; let cool.
- Pour cereal into a large bowl. Add buttermilk and let stand for 10 minutes.
- Cream shortening and sugar. Beat in eggs one at a time.
- Sift together flour and salt. Add to creamed mixture alternately with cooled water/soda mixture. Stir in cereal mixture.
- Grease muffin pans. Scoop batter into muffin cups. Bake for 20-30 minutes, or until golden brown.
- Makes 24 muffins.
- Tip: Muffin mix will keep in the refrigerator for 1 week in a covered container.
