Blueberry shortcakes with lime curd cream
Instructions:
- To make the lime curd cream, whip the cream until it forms stiff peaks in a large bowl with an electric mixer set to high speed. Use a rubber spatula to fold in the lime curd.
- To assemble the shortcakes, split the biscuits and place the bottoms on serving plates. Divide the lime curd cream among the biscuits, top with the berries, replace the biscuit tops, and serve.
- Variation: To make bite-sized tartlets, spoon about 1 teaspoon of lime curd into 11⁄2-inch baked tartlet shells or phyllo cups. Top with a dab of whipped cream and a single berry.
