Boppin' John

- 1⁄2 cup long-grain brown rice, rinsed and soaked overnight
- 1 cup plus 2 tablespoons water
Instructions:
This remix of Hoppin’ John uses Baked BBQ Black-Eyed Peas and it’s on hit.
- Drain the rice.
- In a small saucepan over high heat, combine the rice and the water, cover, and bring to a boil. Immediately reduce the heat to low and simmer for 40 minutes, until tender. Remove from heat, set aside, and let steam.
- Prepare the Baked BBQ Black-Eyed Peas , stirring in the reserved rice after 11⁄ 2 hours.
- Serve at room temperature.
