Brunoise
- 1 red bell pepper, cored, seeded, and diced
- 1 yellow bell pepper, cored, seeded, and diced
- 1⁄2 European cucumber, diced
- 1 medium red onion, peeled and diced
- 1⁄4 cup chopped fresh cilantro
Instructions:
Use this brunoise to garnish the gazpacho or any fresh soup. You can also sprinkle it over roasted vegetables or fish. Traditionally, the vegetables for the brunoise are chopped immediately before serving for the freshest possible taste.
- Combine all the ingredients in a small bowl right before serving.
