Butter Cookies
Instructions:
- 1 pound butter, softened
- 2 cups sugar
- 1 teaspoon salt
- 4 cups flour
- 1 teaspoon vanilla
- 1 egg
- Roll dough into 2" log. (Use center cardboard from paper towel roll and saran wrap.)
- Refrigerate 2 hours.
- Cut into ¼" thick slices.
- Bake at 375º for 10 minutes.
- Cool a little on baking sheet, then move to cooling racks.
- Very good--taste like shortbread cookies.
