Butterscotch Sauce
Instructions:
- Good butterscotch is like a good butter cookie—easy to
make, simple tasting, and very rich.
- 3/4 cup cream
- 6 tablespoons (3/4 stick) unsalted butter, cut into pieces
- 3/4 cup brown sugar
- Pinch salt
- Combine the cream and butter in a small saucepan and cook over medium-low heat, stirring occasionally, until the butter melts. Stir in the sugar and salt and cook, stirring frequently, until the mixture is thick and shiny, 5 to 10 minutes.
- Taste and add more sugar if you like. Use right away or refrigerate, well covered, for up to 1 week and rewarm before using.
