CABBAGE SLAW WITH ORANGE–PUMPKIN SEED DRESSING

DRESSING
- ¼ cup extra-virgin olive oil
- 1 small garlic clove, crushed
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- Shredded zest of ⅛ large orange
- ½ cup roasted, salted pumpkin seeds
- ¼ cup fresh orange juice
- 1 tablespoon white wine or cider vinegar
- Salt and fresh-ground black pepper to taste
- ½ small head napa cabbage, bruised outer leaves discarded, remainder cut into quarters
- 1 small carrot, halved
- ⅓ cup diced smoked or savory tempeh or tofu, ham, smoked turkey, or cooked bacon (optional)
Instructions:
Turn on the food processor, and this salad is done.
- In a food processor fitted with the steel blade, combine the dressing ingredients and puree. Remove the blade, leaving the dressing in the processor. Insert the slicing disk.
- Using the slicing disk, slice the cabbage and carrot into the dressing. Turn the salad into a serving bowl and toss. Sprinkle with the smoked tempeh or other protein of choice, or with nothing at all.
