Cake doughnuts
Instructions:
- 21⁄4 cups all-purpose flour;
- 1⁄2 cup sugar;
- 11⁄2 teaspoons baking powder;
- 1⁄2 teaspoon baking soda;
- 1⁄4 teaspoon salt;
- 1⁄4 teaspoon nutmeg;
- 1⁄2 cup buttermilk;
- 2 tablespoons vegetable oil;
- 1⁄2 teaspoon vanilla;
- 1 egg, slightly beaten;
- Hot oil for frying.
- Powdered sugar, cinnamon sugar, or Powdered Sugar Glaze.

- In a large mixing bowl, blend the flour, sugar, baking powder, baking soda, salt, and nutmeg. In a measuring cup, blend the buttermilk, vegetable oil, vanilla, and egg. Stir liquid ingredients into the dry ingredients, just until dry ingredients are moistened.
- Heat 2 to 3 inches oil in a skillet or saucepan to 375 F.
- Dust work surface with flour and turn dough out onto it. Knead lightly until dough is no longer sticky. Roll dough out to about 1⁄2-inch thickness. Cut with floured doughnut cutter. With a pancake turner, transfer doughnuts into the oil and fry 1 minute on each side, until golden brown. Drain on paper towels. Dust while warm with powdered or cinnamon sugar and glaze if desired.
