Calliope coffee

Simple coffee-flavored gelatins such as this were considered quite elegant desserts at the turn of the century. This is a dessert that was served on a showboat that traveled from the head of the Allegheny River down the Ohio to the Mississippi. The calliope was the musical steam whistle, perched on top of excursion boats, that was played on a keyboard to announce the arrival of the steamships.
- 1 package (I tablespoon) unflavored gelatin;
- 1⁄4 cup strong, cold coffee;
- 11⁄2 cups strong, hot coffee, preferably espresso;
- 2 tablespoons sugar;
- Sweetened whipped cream.
- Soften the gelatin in the cold coffee. Stir in the hot coffee and sugar, until gelatin and sugar are dissolved. Allow to cool.
- Pour into 6 small, individual molds and refrigerate 2 to 4 hours, until set. Unmold onto individual serving plates. To serve, top with sweetened whipped cream.
