Caramel Apple Bar
Instructions:
Make this sauce ahead of time, or melt your favorite pre-made caramels into a creamy dip.
For the Caramel Sauce:
1 cup water
1 cup sugar
1/2 cup organic heavy cream
Choose white, dark, milk or all three chocolates, and melt into a creamy topping perfect for drizzling over apples.
For the Chocolate Sauce:
3 ounces each white, milk and dark chocolate, chopped
3 pastry bags fitted with small writing tips
For the Caramel Apples:
6 organic apples
6 wooden popsicle sticks
One 12 inch by 12 inch piece of Styrofoam, covered with wax paper
Yield: 6 Apples

FOR THE CARAMEL SAUCE:Combine water and sugar in a heavy-bottomed saucepan. Turn heat to low and stir until the sugar dissolves. Turn heat to medium and let mixture simmer until golden brown. Do not stir. Remove pan from heat and carefully stir in heavy cream. Caramel will thicken as it cools down. Pour into crock pot turned on low.
FOR THE CHOCOLATE SAUCE: Melt each chocolate separately in a double boiler. Using a spatula, carefully spoon each chocolate into its own pastry bag. Repeat until each chocolate is melted and in a pastry bag.
FOR THE CARAMEL APPLES: Push a popsicle stick into the bottom of each apple. Swirl apple in caramel. Sprinkle with desired toppings. Drizzle different kinds of chocolate randomly over the apple. Stick in styrofoam to set. When everyone is finished decorating, place apples in refrigerator to firm up, or enjoy immediately! If your guests wish to take their apple home as a party favor, wrap in a square of wax paper and secure with a black or orange ribbon.
