Carp and Red Pepper Stew
Instructions:
- Season the fish with salt and set aside for a few minutes. Heat the olive oil in a large pot and cook the onions over medium heat, stirring, until soft and lightly golden. Add the bell pepper and cook for about 5 minutes, stirring, to soften. Add the tomato, parsley, and enough water to come about one-third of the way up the pot. Bring to a boil. Reduce the heat to low.
- Stir the flour into the water and add it to the pot. Season with salt and stir. Place the fish over the vegetables and simmer, with the lid askew, for 35 to 45 minutes; the mantzia should be thick but liquid. Remove from the heat, cool slightly, and serve
