Carrot and Apple Salad
Instructions:
- 1 Granny Smith apple, cored and cut into quarters
- 3 tbsp. lemon juice
- 1 tbsp. canola oil
- 1 tsp. sugar
- 3 large carrots, washed and peeled
- 1/2 tsp. salt ,
- 1/2 tsp. pepper.
- 1. Using a cheese grater, grate apple, including the skin, into a medium bowl. Sprinkle with lemon juice and use your hands to combine thoroughly.
- 2. Add oil and sugar to grated apple.
- 3. Grate carrots over a medium bowl. Add grated carrots, salt, and pepper to apple mixture. Mix.
- 4. Cover and store in the refrigerator until ready to serve.
