Carrot and tropical fruit salad
Instructions:
- Whisk together the mayonnaise, sour cream, sugar, and salt in a large bowl and set aside.
- Coarsely grate the carrots with a box grater or in a food processor fitted with the coarse shredding disc and add them to the mayonnaise mixture. Add the coconut, pineapple, and dried mango and stir to coat.
- Cover and refrigerate for at least 1 hour. Stir well before serving.
