Cassava Balls
Instructions:
- Topoi can be eaten either as a porridge for breakfast or a dessert.
- 3 cups cassava (yucca or yuca), grated
- 1 cup sugar
- 1â„2 cup grated fresh coconut (or
- 1â„2 cup dessicated coconut refreshed with 2–4 TBS warm water or milk)
- 1 cup coconut milk
- boiling water to cover
- Mix 2 cups of the cassava with sugar and coconut. Form into 1- to 11â„2-inch wide balls. Allow to rest for 10 minutes.
- Slip carefully into boiling water. Cover and simmer gently for 15 minutes.
- Remove from water, drain, and reserve.
- Add remaining cassava to pot. Cook stirring constantly until liquid thickens to porridge-like consistency.
- Add coconut milk.
- Return balls to pot to warm through.
- Serve hot or cold.
