Catalan Barbecue sauce
Instructions:
- Coarsely chop the onions.
- Using a rolling pin or other heavy utensil, crush the garlic cloves, lemongrass, and ginger, then finely chop them.
- Squeeze the oranges and reserve the juice. Put a large saucepan over medium heat, then add the oil. Add the onion and cook for 5 minutes, until dark golden.
- Add the garlic and cook for 3 minutes.
- Add the sugar, orange juice, and molasses and let the mixture cook for 3 minutes.
- Pour in the honey.
- Add the ginger and lemongrass.
- Add the mustard, Worcestershire sauce, and ketchup.
- Add the tomatoes and simmer for 30 minutes.
- Season with salt.
- Strain through a fine sieve and let cool.
