Cathedral Cookies
Instructions:
- 2 eggs, slightly beaten
- ½ cup butter
- 1 large package of chocolate chips
- 2 cups nuts, chopped
- 1 large package miniature marshmallows (colored)
- 1 teaspoon vanilla
- ¼ cup powdered sugar
- In double boiler, cook the eggs, butter, and chocolate chips, stirring constantly until eggs appear done (doesn’t take long).
- Add vanilla. Take off heat and cool thoroughly.
- Add chopped nuts and miniature marshmallows. Mix well.
- Then form into rolls and coat in powdered sugar.
- Place rolls in refrigerator until thoroughly cold (at least one hour).
- Slice into cookies and apply powdered sugar. Serve at room temperature.
- Makes about 4 twelve-inch rolls which will slice into several dozen cookies.
