Cheese corn bread
Instructions:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour, sifted
- 1/4 cup sugar
- 1/2 teaspoon salt
- 4 teaspoons baking powder
- 1 1/2 cups grated sharp cheddar cheese
- 1 egg
- 1 cup milk
- 1/2 cup shortening, softened
- Sift together cornmeal, flour, sugar, salt, and baking powder.
- Stir in cheese. Mix in egg, milk, and shortening.
- Beat with a rotary beater about 1 minute or until smooth.
- Do not overbeat.
- Pour in a greased 8-inch square pan.
- Bake at 375 degrees for 30 minutes. Cut in squares.
- Serve hot. Serves 8.
