Cherry Pineapple Cake

Fruit mixture:
- 1 can red tart cherries
- 1 can crushed pineapple
- ½ cup unsweetened shredded coconut
- ½ cup sweetener, such as maple powder or honey
- ½ cup chopped walnuts, optional
- 1½ cups whole wheat flour
- ½ cup oat flour
- 1½ teaspoons baking powder
- ¼ cup sweetener, such as maple powder
- 1½ cups plant-based milk
Instructions:
This cake melts in your mouth, and the visual effect is quite beautiful.
- Preheat the oven to 350ºF. For the fruit mixture, combine the cherries, pineapple, coconut, sweetener, and walnuts in a 9 × 13-inch baking pan. Spread out evenly.
- For the topping, combine the wheat flour, oat flour, baking powder, sweetener, and milk in a small bowl and pour it over the fruit mixture. Do not stir.
- Bake at 350ºF for 45 to 50 minutes.
