Chicken breasts gourmet
Instructions:
- 4 chicken breasts
- Flour to dust chicken
- 2 tablespoons salt
- ½ teaspoon thyme
- ½ teaspoon marjoram
- ½ teaspoon paprika
- Toast
- Fat for frying
- Sliced almonds
- Sauce:
- 2 cups pineapple juice
- 1/4 cup lemon juice
- 2 tablespoons cornstarch
- 2 tablespoons sugar
- 1/2 teaspoon curry powder
- Roll chicken in flour that has been seasoned with salt, thyme, marjoram, and paprika.
- Fry in fat until golden brown.
- Arrange chicken in a roaster and cover with the following sauce.
- Roast at 350 degrees for about 1 hour or until tender.
- Baste 2 or 3 times to glaze.
- Arrange chicken on toast, pour sauce over, and sprinkle with almonds to serve.
- (Split whole breasts in half lengthwise.)
- Sauce:
- Mix pineapple juice, lemon juice, cornstarch, sugar, and curry powder in a saucepan.
- Cook and stir until mixture thickens slightly.
