Chicken Club Sandwiches
Instructions:
- In 10-inch skillet, combine chicken and enough cold water to cover; heat to boiling over high heat. Reduce heat; cover and simmer until chicken loses its pink color throughout, 8 to 10 minutes. Drain and cool to room temperature.
- Meanwhile, prepare flavored mayonnaise.
- In 12-inch skillet, cook bacon over medium heat until browned. Transfer bacon to paper towels to drain.
- Spread about 1 teaspoon mayonnaise on each bread slice; top 4 bread slices with tomato slices and lettuce.
- Cut chicken breasts on diagonal into thin slices. Place 4 more bread slices, mayonnaise side up, on top of lettuce. Arrange chicken and bacon on top and cover with remaining 4 bread slices.
- To serve, cut each sandwich on diagonal into quarters. Use frilled toothpicks to hold slices together, if you like. Makes 4 main-dish servings.
