Chicken in Spiced Sauce
Instructions:
- 2 1/2 lbs. boneless chicken
- 3 tablespoons vegetable oil
- l 1/2 tablespoon flour
- 1/3 cup salt−free canned tomatoes
- 1/3 cup water
- 1 tablespoon lemon juice
- 4 tablespoons chopped onion
- 3 tablespoons poultry seasoning
- 1/4 teaspoon paprika
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic pepper
- Rice
- Cut chicken into individual pieces. Heat oil in large pan.
- Roll chicken in flour and brown in oil over moderate heat.
- Add tomatoes and water, and cook 30 to 40 minutes or until tender.
- Add remaining ingredients 15 minutes before chicken is ready to serve.
- Serve over rice.
