Chicken Mushroom Dijon
Instructions:
- 4 each chicken breast halves - skinned & boned
- 1 teaspoon Lemon Pepper
- 1/4 teaspoon onion powder
- 1 cup Heavy cream
- 1 tablespoon Dijon mustard
- 1 cup mushrooms
- 2 tablespoons Butter
- Sprinkle both sides of chicken with lemon-pepper seasoning and onion power.
- In a skillet cook chicken in margarine or butter over medium heat for 8 to 10 minutes, or till tender and no longer pink, turning once.
- In a small mixing bowl mix together sour cream, cream and mustard.
- Pour Mushrooms over chicken, pour mustard mixtureover chicken and mushrooms.
- Stir until sauce thickens and mushrooms and chicken are well coated.
- NOTES : Can use 1/3 cup of sour cream and 2/3 cup of heavy cream (instead of 1 cup heavy cream) for a thicker sauce, or substitue fast free sour cream and fat free half and half.
