Chicken Tortilla Casserole
Instructions:
- 6 Corn tortillas, cut in long strips
- 1 1/2 cups Vegetarian Carnitas (chicken)
- 2 cups Tomato Sauce
- 1 cup Cashew Cheese Sauce
- 1 cup Olives, sliced
- Mix Vegetarian Carnitas with tomato sauce and olives.
- Add tortilla strips and toss gently to prevent tearing the tortillas.
- Pour moxture in Pam-sprayed casserole dish and top with Cashew Cheese.
- Bake at 350 F for 30 minutes.

- with a side of fresh corn
- with Pico de Gallo
- with a vegetable tossed salad
